Your expert A question about this product?

When does your coffee reveal its full potential?

At Chronic., we roast our coffees every day. We always try to send them out after a short resting period, but sometimes, when demand runs high, they may reach you very fresh.

After roasting, coffee keeps evolving. It gradually releases the carbon dioxide built up during roasting, which lets the cup settle into balance. Notes that are too sharp or pronounced soften, making room for more precision, sweetness and complexity. Letting coffee rest means giving it time to show everything it has.

We recommend resting it for at least 15 days after roasting. For our seasonal and exceptional coffees, the ideal tasting window is usually 3 to 6 weeks after roasting.

The best way to brew it

Some coffees show their aromas best with a particular brewing method, and that's what we recommend here. Of course, feel free to experiment with other methods. We love hearing what you think.

Meet the Producer

ALMAZTEKLU

Almaz Teklu is an independent producer from Gedeb, working as a single farmer, which ensures complete traceability and a unique identity for this lot. Unlike lots from collective washing stations, this coffee comes exclusively from her farm, reflecting her work, farming practices, and vision of quality.

Her focus on selective harvesting, cherry ripeness, and precision in washing allows for achieving Grade 1, the highest Ethiopian standard.

A human-scale coffee, driven by a committed producer, where each cup tells a unique story.

all about this coffee

ETHIOPIA, CHELCHELIE, GEDEB

Gedeb, in the south of the Yirgacheffe region, is one of Ethiopia's most renowned terroirs. At high altitudes, on rich and fertile soils, coffee trees mature slowly, developing aromatic profiles of great complexity.

The fully washed process enhances this identity, highlighting clarity, precision, and aromatic brilliance. One often finds delicate floral notes, vibrant citrus, sometimes a hint of black tea or stone fruit, with a silky texture and a clean finish.

A coffee that perfectly embodies Ethiopian finesse in its purest form.

fantastic coffee, tastes differently than described

This washed coffee from Almaz Teklu offers an unusual flavour combination. It's a great coffee but I tasted quite different things than the description on the webpage. On one hand there is a deep but inoffensive acidity that reminded me of green apples and rose hip tea. Towards the end the flavour goes in the direction of high quality black tea and sweet chocolate.
