01PM is the perfect coffee to round off a meal. A 100% organic and Fairtrade Arabica from Ethiopia, grown at altitude in the Sidama region by the Homacho Waeno cooperative. Notes of lemon, jasmine and brown sugar, with a lovely softness that wraps around you without overwhelming. Fruity, floral, balanced. The kind of cup you savour slowly before getting back to it.

Your expert A question about this product?

When does your coffee reveal its full potential?

At Chronic., we roast our coffees every day. We always try to send them out after a short resting period, but sometimes, when demand runs high, they may reach you very fresh.

After roasting, coffee keeps evolving. It gradually releases the carbon dioxide built up during roasting, which lets the cup settle into balance. Notes that are too sharp or pronounced soften, making room for more precision, sweetness and complexity. Letting coffee rest means giving it time to show everything it has.

We recommend resting it for at least 15 days after roasting. For our seasonal and exceptional coffees, the ideal tasting window is usually 3 to 6 weeks after roasting.

The best way to brew it

Some coffees show their aromas best with a particular brewing method, and that's what we recommend here. Of course, feel free to experiment with other methods. We love hearing what you think.

Meet the Producer

HOMACHOWAENO COOPERATIVE

The Homacho Waeno cooperative is based in Aleta Wondo, in the Sidama district. It brings together hundreds of small family farmers who grow their coffee in the shade of native trees, in what are known as forest gardens. An ancestral form of agroforestry that doesn't need a "sustainable" label: it always has been.

The cooperative is affiliated with the Sidama Coffee Farmers Cooperative Union (SCFCU), one of Ethiopia's strongest organisations for coffee export. This model gives producers direct access to international markets, without a long chain of middlemen. Put simply: better pay for real work.

The cherries are handpicked, carefully sorted, then washed and dried on raised beds. That process is what gives the coffee its aromatic clarity and precision in the cup.

When you choose these organic coffee beans, you support these families directly. Not a ghost cooperative on a pack. A real organisation, real people, a real terroir.

all about this coffee

ETHIOPIA, ALETA WONDO, SIDAMO

Ethiopia is the birthplace of coffee. It was here, in the highlands of Sidama, that Coffea arabica grew wild long before anyone thought of turning it into a drink. Aleta Wondo is a small town perched in this southern region of the country, between 1,900 and 2,200 metres above sea level.

That altitude changes everything. It slows the ripening of the cherries, the fruit takes its time, and you can taste it in the cup. The soil is volcanic and rich, and cool nights contrast with mild days. The result is one of the most interesting terroirs for specialty coffee.

Sidama is recognised worldwide by roasters and specialist buyers. Aleta Wondo in particular produces coffees with well-defined profiles: ripe yellow fruit, citrus zest, juicy acidity. Sometimes floral notes appear as the cup opens up.

These organic coffee beans come from a place where coffee has been part of the landscape's DNA for centuries. Not an industrial plantation. Gardens, trees, families. A terroir that speaks for itself.

Once again coming back to classic

1 PM came t o be my working workhorse - morning or afternoon. I did try 10 AM, and might try others, but 1 PM is the staple.

Combination of acidity, body and roast makes it ideal for me. Fully recommend.

Not to my taste

It is slightly too bitter for me

Thank you for your feedback on the 01PM. Ethiopian coffees are actually known for their brightness and fruity notes rather than bitterness, what you may be picking up is their natural acidity, which can sometimes read that way depending on the palate.
If you're looking for something rounder and more mellow, our 10AM Guatemala has a much softer profile, with low acidity and a smooth finish. Not sure where to start? Our coffee quiz can help point you in the right direction.
We hope to find your perfect cup together.
